Our chimichurri comes from Elva, Marco's mother, a beloved fixture in her community in León, Mexico, where she runs a much loved chilaquiles restaurant.

 

Our version is a Mexican-style spin on the classic Argentinian chimichurri, inspired by Elva's love of food and her gift for bringing people together at the table.

 

Tangy, bold, and a little saucy, it goes on nearly everything, we've been known to carry a jar in a purse to restaurants and barbecues, just in case. Someday, we hope to grow the fresh herbs for it right here on our own land.
